The absolutely remarkable transformation of a vacated CVS building into a state-of-the-art brewery in the heart of downtown Lindenhurst is nearly complete.

Sand City Brewing Co. partners William Kiernan and Kevin Sihler say they’re just a few weeks from opening their second, much larger location on South Wellwood Avenue. They are hoping to open next month after some final inspections.

The first Sand City brewery opened in Northport in 2015.

“In April it will have been two years since we signed the lease,” Kiernan said. “It was originally a CVS and the amount of construction that we had to do to get in there … It’s been a real labor of love.”

The construction, most notably, involved ripping up the old floors and pouring new ones, as well as erecting support beams in what’s now a sunken brewhouse of which visitors will get a full view.

“We figured to let the people in on the show,” Kiernan said.

The setup also makes the place look massive.

That’s something the partners embrace.

“So now there’s this building in the downtown,” Kiernan said, “and it is a big building, but it didn’t look that big when that floor was in there. And by removing it, it gives it this sense of tremendousness. That feeling itself just takes you away.”

That feeling of escape also spills over to the tasting room.

“We’re trying to go for an industrial look, obviously; it’s a brewery,” Kiernan said. “But we’re also going for laid back and relaxed.”

“We always seem drawn to this beach motif, but we really just want people to walk in there and feel they’re going somewhere different,” he continued. “With the murals and high ceiling, our goal is really just an escape.”

The new brewery will also help the company triple the amount of beer Sand City is able to brew in Northport, which will remain open.

Still, Sand City South, as they’re calling it, is considered a medium-sized brewery, especially when compared to a Blue Point in Patchogue or Great South Bay in Bay Shore.

“Our goal is not to brew as much beer as possible,” Kiernan said. “Our goal is to make the best beer, most efficiently.”
